Davino’s flagship white blend is a refined expression of Ceptura’s vineyards, crafted with care, precision, and respect for the grapes. Harvesting takes place at night and in the early morning to preserve freshness, followed by careful hand-sorting at the winery. Each grape variety is vinified separately and parcel by parcel, allowing its individual character to shine.

The winemaking approach is gentle and minimal-intervention, designed to highlight natural aromas and purity of fruit. Grapes are pressed directly, with the juice resting briefly on fine lees to build texture and complexity. Fermentation is carefully managed to preserve freshness while developing depth and balance.

The 2024 blend combines Sauvignon Blanc, Fetească Albă, and Riesling Italico (Welschriesling). Sauvignon Blanc forms the core of the wine, with a portion fermented and matured in oak to add subtle structure and complexity. Fetească Albă is fermented in stainless steel to retain its floral elegance, while Riesling Italico contributes freshness and mineral character. Overall, oak is used with restraint to enhance texture without overpowering the wine.

Maturation continues for six months on fine lees, with gentle stirring to build roundness and harmony. Only a light filtration is applied before bottling, preserving the wine’s natural expression.

The result is a wine that is creamy yet vibrant, offering aromas of white flowers, ripe white fruits, and delicate mineral notes, lifted by subtle hints of oak. On the palate, it is fresh, balanced, and layered, with a long, elegant finish that reflects both the quality of the vineyards and Davino’s thoughtful approach to winemaking.
